firstly melt chocolate and butter in a microwave or a double boiler and keep aside to cool.
in another bowl take 3 egg yolks and sugar 1/3 cup beat with a hand mixer until the mixture is pale and thick,when u lift up the whisk attachment the mixture falls like a ribbon .now add vanilla extract and the melted chocolate mixture,beat on low speed until well incorporated keep aside
in another bowl beat the egg whites half way through add sugar and beat until stiff peaks,when you lift the whisk attachment the whites must stand stiff and fluffy.then take the chocolate mixture bowl add in half of the egg whites and fold in slowly so that the whites do not deflate .then mix in the rest of the whites until mixed well.then put them into ramekins bake for 10 to 15 mins or until the outside edges of the cakes are set but the middle still looks a little wet and wobbly. You may have cracks on the top surface of the cakes.
tips: try to use unsalted butter ,leave out salt if you are using salted butter

melt chocolate ,heavy cream vanilla essence and butter in a microwave take out and whisk for 3 mins until smooth. use it as glaze,dip or just eat it.you can have it with fresh fruits ,just prick the fruits like strawberry apple or any fruit you like with a tooth pick then dip it in the chocolate mixture so as to coat the fruit well.if you want to have later you can keep them on plate to dry or even refrigerate or eat immedeatly.
tips: if you don't have a microwave then you can take two bowls one with boiling water on stove and another bowl placed on top with the chocolate and other ingredients keep stiring with a spatula untill melted.
2.makes a yummy dessert so just make it fresh when needed or else the chocolate mixture will thicken when it cools down.

ingredients:
chill mango and yogurt for half hr to 45 mins before making this dish
puree mango with saffron ,sugar,cardamom crushed and yogurt together until well blended.pour it to shot glasses or mini wine glasses and garnish with chopped pistachios
tips: if you don't get fresh mango you can use store bought mango puree, but they will have sugar in them so check and then add sugar
2.preserved mangoes don't taste that good
3.serve chilled

ingredients:
beat eggs with a spoon for a minute
heat 3tsp sugar in a pan and let it melt and turn golden yellow and liquidy switch off the heat.add it to a bowl add sugar ,egg, heavy cream and milk together mix well then heat a thick bottom pan add the mixture and cook on medium heat for 6-7 mins while continuously stirring .do not stop stirring add saffron and cook on medium high until the mixture turns crumbly then add cardamom powder and ghee cook until moisture is almost gone and the mixture has soaked the ghee.take of the heat and serve warm
tips: for sugar caramel take of the heat and transfer caramelised sugar immedeatly to the bowl and mix with the milk mixture or else the sugar will cook further and turn to caramel strings and harden and will taste different

in a small bowl take all the nuts add lemon and orange zest and orange juice mix and leave it for 1/2hr
then in a bowl mix allpurpose flour salt ,baking powder mix and keep aside
with a help of a electric mixer beat butter and sugar until creamy and fluffy then add egg one by one and beat well after each addition then add the nut mixture and mix well.then slowly mix in the flour mixture until well blended.with a whisk or spatula
now grease baking pan with butter and then add the mixture and level it .just bang the bottom of the baking pan on the countertop to make sure there are no air pockets and the mixture is well set.
bake in the preheated oven for 1 and half hr or more check by inserting a skewer knife or stick until it comes out clean as cooking time differs from oven to oven(check once after an hr at first)
tips: you can use demerara sugar if you don't have dark brown sugar .the colour of the cake will turn out a little more darker
2.lemon or orange zest is the outer skin of that fruit.just grate the outer skin with a fine grater(make sure you don't grate the white inner layer of the fruit,it is bitter).zest the orange first then cut to half then squeeze the juice.
3.this is a dense cake
4.you can add 3tbsp of rum for an extra kick.then brush some more rum on all sides once the cake is completely cool.not good for kids though!or leave out
5.candied mixed peel is a mixture of orange lemon peel ,am not sure if its available in india. you can skip it if you don't like instead add other nuts
5.you can add dried prunes,cherry,cranberry or candied pineapples
6.if you are using salted butter then skip the salt
7.if you don't have a mixer then you can do it by hand and a whisk but your hands need to be quick

demould the cake and cool,once cooled u can frost it with whipped cream or butter frosting and top it with chocolate shavings chopped nuts or maraschino cherries
tips:1. if you don't get brown sugar you can use 3/4 cup of demerara sugar and 1/4 cup of granulated white sugar.the cake will be a lil darker when you use demerara sugar

ingredients:
first melt butter with chocolate then take out of microwave , add vanilla essence and mix well
pulse crackers (not to a fine powder) and spread on a plate
spread chopped almonds ,walnuts and sprinkles on another plate
first dip the bananas in the chocolate mixture roll lightly on crackers powder then roll firmly on the nuts arrange it on a plate then refrigerate .you can also freeze and poke toothpicks to serve(it might get out of shape while rolling just shape it with your hands)
tips:you can use tooth picks to do the whole coating process so tat you don't mess your hands
2.its an awesome treat for kids -for snack time and also for kids, home b'day parties
3.you can also use whole yelakki bananas for this dish.coz these bananas are more flavourful than the big ones
4.cake sprinkles add an appeal and colour to this dish

Kiwi chocolate plain cake:
ingredients:
all purpose flour-1 cup
granulated white sugar- 1 cup
cocoa powder- 4tbsp
eggs- 2
kiwi crush- any store bought bottled one- 3tbsp
milk- 1/2 cup
butter- 3tbsp melted
vegetable or sunflower oil- 2tbsp
baking powder- 3/4tsp
salt- 1/4tsp
procedure:
preheat oven to 180CENTIGRADE/350 FARENHIET
take the dry ingredients -all purpose flour, salt , baking powder, cocoa powder in a bowl mix well keep aside
in another bowl beat 2 eggs until 2-3 minutes continuously then add sugar and whisk until fluffy next add kiwi crush, milk and butter and mix lightly, so that the fluffiness of the egg mixture doesn't deflate .
next pour the wet mixture to the dry bowl and mix with a whisk slowly until the ingredients are well incorporated.
grease the baking pan with butter and dust with flour lightly ,pour the mixture to the pan .tap the pan on a flat surface so the mixture settles well and the air pockets or bubbles if any goes off .
bake for 35-40 minutes , check after 30-35 minutes by inserting a stick or a knife in the center of the cake(this will help you determine how much more it needs to bake, avoiding overcooking or under cooking of the cake) .if it comes out clean then its done.
kiwi crush gives the cake a good flavor and taste,a good snack box recipe for kids, you can also add walnuts finely chopped.
tip: I used an 8'inch round pan, you can also use a loaf pan

ingredients:
cracked barley- 1 cup
full fat milk- 4-5 cups
sugar-1 cup 1/4 or according to your taste
cardamom powder-1/ 2 tsp
almond and cashew crushed-4 tbsp

ghee- 1 1/2 tsp
extra milk boiled for adjustment
golden raisins-1 tbsp optional
procedure:
slightly roast cracked barley slightly for 5-6 minutes on low heat .then cook it ,until well cooked (not mushy ) like how we cook rice for rice kheer
lightly dry roast the nuts on low heat and crush them roughly with a pounder
boil milk until reduced to 3 cups now add the sugar and boil for 15 minutes .next add the cooked barley ,crushed nuts ,a teaspoon of ghee add a pinch of salt . cook and reduce a little to kheer consistency ,about 10-15 minutes in case the kheer is thick you can add milk at any point.finally before switching off just add half a tsp of ghee (if you are adding raisins then just fry it with the 1/2 tsp ghee)and the cardamom powder.serve hot or cold.refrigerate it for an hour it taste awesome!..
tips:
1. barley is a starchy cereal .so its hard to have an exact ,measure of milk and sugar.and also depends on the quality of the cereal.
2. while adding the cooked barley add 3/4 of it check the consistency and then add more if required.
3. salt cuts the blandness of the barley . and enhances the sweetness

Godhi ladu/ wheat atta laddu
ingredients:
wheat atta- 2 cups
sugar- 2 cups
ghee- 3-4 tbsp(not melted)
cashew broken to small pieces-2-3 tbsp
cardamom powder- 1/4 tsp
procedure:
in a blender grind the sugar to fine powder
heat up a pan ,fry atta on low heat until the raw smell is gone 8-10 minutes,do not burn the flour, keep stirring continuously .
next add 2 tbsp of ghee in another pan add cashew fry until it slightly changes colour then add the fried flour and continue to fry for another 1- 2 minutes.take off the heat now add the sugar powder and cardamom powder mix well . leave for a minute .this laddu should be made when the mixture is hot .check the consistency .add more ghee to get the laddu to bind ,mix well and make big lemon size balls .and let it cool and set for an hour or two.at first you will see that the laddu is a little soft ,once it cools it'll set well and be firm
tip:
1. i have a sweet tooth so i have taken equal measures of sugar and flour,if you don't like it too sweet take out 2 tbsp of powder sugar out before adding to the flour mixture.
2. be careful when you add ghee at the end ,because too much ghee will make the laddoo too soft and will not hold shape.
3. it will be too hot to handle ,but it should be done before it cools or else you cant make laddoos.

an easy recipe which just takes minutes to prepare and no mixers or blenders,just mix and make.traditionally carrot cakes have raisins and pecans ,i dont like them so gave it my own indian twist ,tried a version with coconut and cardamom

in another bowl take egg and sugar and beat until fluffy with a whisk (3-4 minutes).add melted butter and oil ,vanilla extract,grated carrots and coconut.mix wel and add it to the dry ingredients and with soft strokes mix until well incorporated

bake for 35- 40 minutes . u will see light golden colour on the top insert a tooth pick in the centre to check ,tooth pick should come out clean

- the texture of caster sugar is like the one which is inbetween confectioners sugar and normal sugar,in usa they call its granulated sugar

Carrot and dates cake:
ingredients:
- all purpose flour-1 1/2 cup
- vegetable oil-1 cup
- brown sugar-1 cup
- eggs-3
- cinnamon powder-1tsp
- grated carrots-2 cups
- salt-1 pinch
- baking powder-1tsp
- chopped walnuts-1/2cup
- chopped dates-1/2cup
procedure:
grease cake dish with butter and keep aside
in a bowl sift ,flour salt,cinnamon powder and baking powder (mix well)
in another large bowl mix together grated carrots,sugar,oil,nuts,dates and eggs
then add the dry mixture to the wet mixture and mix well.(make sure there are no flour pockets)
pour the mixture to a greased dish and bake in the preheated oven for 35-40 mins depending on the oven .when you insert a knife or a stick in the middle of the cake it should come out clean.
demould the cake and cool,once cooled u can frost it with whipped cream or butter frosting and top it with chocolate shavings chopped nuts or maraschino cherries
tips:1. if you don't get brown sugar you can use 3/4 cup of demerara sugar and 1/4 cup of granulated white sugar.the cake will be a lil darker when you use demerara sugar
2. you can reduce the amount of cinnamon powder if you want

Peekaboo banana treat:
ingredients:
- banana-2-3 cut into 3-4 pieces
- butter-2tbsp
- dark/milk chocolate-1 cup
- pure vanilla essence-1/2tsp
- marie biscuits or graham crackers powder-4-6 tbsp.
- colourful cake sprinkles -optional-2-3 tbsp.
- chopped almonds and walnuts-4-5 tbsp.
- tooth picks to serve
procedure:
pulse crackers (not to a fine powder) and spread on a plate
spread chopped almonds ,walnuts and sprinkles on another plate
first dip the bananas in the chocolate mixture roll lightly on crackers powder then roll firmly on the nuts arrange it on a plate then refrigerate .you can also freeze and poke toothpicks to serve(it might get out of shape while rolling just shape it with your hands)
tips:you can use tooth picks to do the whole coating process so tat you don't mess your hands
2.its an awesome treat for kids -for snack time and also for kids, home b'day parties
3.you can also use whole yelakki bananas for this dish.coz these bananas are more flavourful than the big ones
4.cake sprinkles add an appeal and colour to this dish

Kiwi chocolate plain cake:
ingredients:
all purpose flour-1 cup
granulated white sugar- 1 cup
cocoa powder- 4tbsp
eggs- 2
kiwi crush- any store bought bottled one- 3tbsp
milk- 1/2 cup
butter- 3tbsp melted
vegetable or sunflower oil- 2tbsp
baking powder- 3/4tsp
salt- 1/4tsp
procedure:
preheat oven to 180CENTIGRADE/350 FARENHIET
take the dry ingredients -all purpose flour, salt , baking powder, cocoa powder in a bowl mix well keep aside
in another bowl beat 2 eggs until 2-3 minutes continuously then add sugar and whisk until fluffy next add kiwi crush, milk and butter and mix lightly, so that the fluffiness of the egg mixture doesn't deflate .
next pour the wet mixture to the dry bowl and mix with a whisk slowly until the ingredients are well incorporated.
grease the baking pan with butter and dust with flour lightly ,pour the mixture to the pan .tap the pan on a flat surface so the mixture settles well and the air pockets or bubbles if any goes off .
bake for 35-40 minutes , check after 30-35 minutes by inserting a stick or a knife in the center of the cake(this will help you determine how much more it needs to bake, avoiding overcooking or under cooking of the cake) .if it comes out clean then its done.
kiwi crush gives the cake a good flavor and taste,a good snack box recipe for kids, you can also add walnuts finely chopped.
tip: I used an 8'inch round pan, you can also use a loaf pan

Barley payasam:
ingredients:
cracked barley- 1 cup
full fat milk- 4-5 cups
sugar-1 cup 1/4 or according to your taste
cardamom powder-1/ 2 tsp
almond and cashew crushed-4 tbsp
salt- 1 pinch
ghee- 1 1/2 tsp
extra milk boiled for adjustment
golden raisins-1 tbsp optional
procedure:
slightly roast cracked barley slightly for 5-6 minutes on low heat .then cook it ,until well cooked (not mushy ) like how we cook rice for rice kheer
lightly dry roast the nuts on low heat and crush them roughly with a pounder
boil milk until reduced to 3 cups now add the sugar and boil for 15 minutes .next add the cooked barley ,crushed nuts ,a teaspoon of ghee add a pinch of salt . cook and reduce a little to kheer consistency ,about 10-15 minutes in case the kheer is thick you can add milk at any point.finally before switching off just add half a tsp of ghee (if you are adding raisins then just fry it with the 1/2 tsp ghee)and the cardamom powder.serve hot or cold.refrigerate it for an hour it taste awesome!..
tips:
1. barley is a starchy cereal .so its hard to have an exact ,measure of milk and sugar.and also depends on the quality of the cereal.
2. while adding the cooked barley add 3/4 of it check the consistency and then add more if required.
3. salt cuts the blandness of the barley . and enhances the sweetness

Godhi ladu/ wheat atta laddu
ingredients:
wheat atta- 2 cups
sugar- 2 cups
ghee- 3-4 tbsp(not melted)
cashew broken to small pieces-2-3 tbsp
cardamom powder- 1/4 tsp
procedure:
in a blender grind the sugar to fine powder
heat up a pan ,fry atta on low heat until the raw smell is gone 8-10 minutes,do not burn the flour, keep stirring continuously .
next add 2 tbsp of ghee in another pan add cashew fry until it slightly changes colour then add the fried flour and continue to fry for another 1- 2 minutes.take off the heat now add the sugar powder and cardamom powder mix well . leave for a minute .this laddu should be made when the mixture is hot .check the consistency .add more ghee to get the laddu to bind ,mix well and make big lemon size balls .and let it cool and set for an hour or two.at first you will see that the laddu is a little soft ,once it cools it'll set well and be firm
tip:
1. i have a sweet tooth so i have taken equal measures of sugar and flour,if you don't like it too sweet take out 2 tbsp of powder sugar out before adding to the flour mixture.
2. be careful when you add ghee at the end ,because too much ghee will make the laddoo too soft and will not hold shape.
3. it will be too hot to handle ,but it should be done before it cools or else you cant make laddoos.

carrot cake:
an easy recipe which just takes minutes to prepare and no mixers or blenders,just mix and make.traditionally carrot cakes have raisins and pecans ,i dont like them so gave it my own indian twist ,tried a version with coconut and cardamom
ingredients:
all purpose flour-1cup
super fine sugar- 3/4 cup
cardamom crushed- 1/4 tsp
baking soda- 1tsp
salt- 1/4 tsp
salted butter melted- 1/4 cup
vegetable/canola oil- 3tbsp
grated carrots- 1 cup
grated fresh coconut- 1/4 cup
vanilla extract- 3/4 tsp
egg-1 large
extra butter and flour for greasing and dusting the baking pan
procedure:
preheat oven to 180 centigrade or 350 farenheit
in a bowl mix flour,salt,cardamom and baking soda
in another bowl take egg and sugar and beat until fluffy with a whisk (3-4 minutes).add melted butter and oil ,vanilla extract,grated carrots and coconut.mix wel and add it to the dry ingredients and with soft strokes mix until well incorporated
grease the baking pan with butter and dust it evenly with some flour .
pour the batter into the pan ,tap the pan to remove air bubbles .
bake for 35- 40 minutes . u will see light golden colour on the top insert a tooth pick in the centre to check ,tooth pick should come out clean
tip:
1.check few minutes ahead so that you dont over cook and the cake gets dry .cooking time also depends on the oven .

energy laddoo:
peanuts roasted -1 1/2 cup
sesame seeds- 2 tbsp
flax seeds- 4 tbsp
dates- 6
jaggery- 5-6 tbsp
ghee- 1tsp
procedure:
lightly toast sesame seeds on medium heat for a minute
also toast the flax seeds for 5-6 minutes
in a blender add peanuts ,sesame seeds,dates and flax seeds and coarsely
heat up a non stick pan melt jaggery ,wait until u see bubbles all over ,take of the heat and add the ground mix also add the ghee .mix well , leave for 3-4 minutes and shape them into lemon size balls. wait until they firm up and then serve
tip: this laddoo has to be shaped into laddoo when it is slightly hot
